Company history
In Stigliano on the high hills of Matera, on 55 hectares of land, there is the farm that takes the name of Salvatore's mother, owner of the company, Donna Tina to produce durum wheat flour and pasta. From the 4000 olive trees he starts a production of two lines of organic oil which take the name of Antiche Terre and Terre di Briganti in memory of the history of the area. In 2010 the company starts a donkey farm to obtain milk for food, medical and cosmetic use. Chocolate Maria Luisa, dedicated to the maternal grandmother, obtains recognition from Basilicata Food & Wine as an Innovative Product 2017.
Why did we choose them
Salvatore Capalbi, owner of the company, contacted us to tell us how much is related to his territory and how he got to the choice of his agricultural products. He brought the pasta and EVO oil that we cooked and enjoyed in a single dish and that satisfied our palates. Donkey chocolate closed the tastings with a flourish!

Angela's organic durum wheat pasta, a bronze-drawn artisan specialty, is produced following an ancient recipe handed down from generation to generation, proposed today using only our organic Senatore Cappelli durum wheat semolina which gives Angela pasta an intense aroma and a strong flavor .
The pasta is dried at low temperature by a slow process that lasts over 24 hours. The bronze drawing allows to better retain the seasonings and gives the Angela pasta rusticity, irregular profiles and a matte color typical of the craftsmanship that differentiates it from the common industrial pasta. |
