Company history
The farm was started in 2012 by Sandra Carusone, who decided to exploit the land owned by her husband's family. The company was started for the production of red onion from Cavasso Nuovo and Val Cosa.
Onion seed was a family tradition passed down from generation to generation until now. This adventure then led to the construction of the transformation laboratory in the cultivated products.
The farm is family-run, in 2019 the two daughters Marica and Sasha entered into partnership with their mother bringing a breath of fresh air given their young age. They start a start to organic and biodynamic agriculture with future projects of orchards and vineyards in the area of the company's hilly site located in Mas Cavasso Nuovo.

I tasted some of the products from their range of preserves: jams, pickles, pickles, Pignoletto Rosso corn flour, juice and vinegar with Ancient Apples and the traditional Frico could not miss.

The top product
The red onion of Cavasso Nuovo is very aromatic with a particular sweetness. It is round in shape with characteristic flattening at the poles, white interior color with red veins; purple in tunics when ripe. Each individual onion weighs between 100 and 150 g. but onions that reach 300g are frequent.
The altitude of the cultivation area is between 200 and 400 m a.s.l. The cultivation of the red onion generally takes place in vegetable gardens and small plots, whose working layer consists of a medium-textured soil, tending to loose, well-ventilated. The most suitable areas are in sunny, ventilated and slightly sloping areas. |
